40 cloves garlic, peeled but left whole (about 4 heads)
1 onion, chopped
½ cup (125 mL) dry white wine or chicken stock

1 cup (250 mL) fresh basil leaves
½ cup (125 mL) fresh parsley leaves

½ tsp (2 mL) salt
¼ tsp (1 mL) freshly ground black pepper
½ cup (125 mL) extra virgin olive oil
