Ingredients
- 1/2 cup shortening
- 1/2 cup chunky peanut butter
- 1/2 cup sugar
- 1/2 cup packed brown sugar
- 1 large egg room temperature
- 1/2 tsp vanilla extract
- 1-1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 1/2 cup grated peeled apple

Instructions
- Preheat oven to 375°. In a large bowl, cream the shortening, peanut butter and sugars until light and fluffy, 5-7 minutes. Beat in egg and vanilla. Combine dry ingredients; gradually add to creamed mixture and mix well. Stir in apple.
- Drop by rounded tablespoonfuls 2 in. apart onto greased baking sheets. Bake until golden brown, 10-12 minutes. Cool for 5 minutes before removing to wire racks.
