Banana Pancakes

Ingredients
- 1 1/2 cups flour self-raising
- 3/4 tsp baking powder
- 2 tbsp caster sugar
- 1 1/2 cups buttermilk
- 2 eggs
- 2 tbsp butter unsalted, melted and cooled
- 2 bananas sliced
- 1/3 cup maple syrup or honey
- non-stick olive-oil cooking spray
- cashews optional, to garnish

Instructions
- Sift the flour and baking powder into a medium bowl. Stir in the sugar. Make a well in the centre of the dry ingredients.
- Combine the buttermilk, eggs and melted butter in a jug. Pour into the well in the dry ingredients and whisk to a smooth batter.
- Lightly coat a small non-stick frying pan with cooking spray and put it over medium–low heat. Pour ¼ cup (60 ml) of batter into the pan and cook for about 1 minute, or until small bubbles appear on the surface. Turn the pancake and cook for a further 1 minute, or until golden and cooked through. Remove from the pan and keep warm. Repeat with the remaining batter.
- Place the pancakes on individual serving plates. Layer with the sliced banana (toss the slices with some lemon juice if you want to prepare them in advance), drizzle with maple syrup or honey and garnish with cashews.
