6 corn tortillas (6 inches)
Nonstick cooking spray
1 can (15 ounces) black beans, drained and rinsed
1 can (11 ounces) canned corn kernels, drained and rinsed
1 small tomato, cored and chopped (about 1/2 cup)
2 tablespoons finely chopped red onion
1 small jalapeño pepper, seeded and finely chopped
2 tablespoons chopped cilantro
1 tablespoon fresh-squeezed lime juice
1/2 teaspoon salt
1/8 to 1/4 teaspoon hot red pepper sauce
1 small ripe avocado, pitted, peeled, and chopped
Directions
Preheat oven 450°F. Place tortillas in single layer on baking sheets. Coat both sides of tortillas with cooking spray. Bake until lightly browned and crisp, about 10 minutes, flipping tortillas over halfway through. Transfer to wire racks and let cool.
In large bowl, stir together beans, corn, tomato, onion, jalapeño, cilantro, lime juice, salt, and hot sauce. Gently fold in avocado. Spoon 1/2 cup onto each tortilla.
