Ingredients
1 bunch rapini (also known as broccoli raab), stem ends trimmed
250 ml / 1 cup water
60 ml / 4 tbsp olive oil
4 cloves garlic, sliced thinly
To taste salt and freshly ground pepper
1 can, 540 ml / 19 oz white beans, rinsed well and drained
To taste olive oil
8 slices country bread, toasted
To taste fleur de sel
Directions
Cut the rapini stems into 2.5 cm / 1” pieces and reserve the florets separately.
Place the rapini stems, the oil and the water in a large skillet, bring to a boil and cook, uncovered, for 2 minutes. Add the florets and cook until all the water has evaporated and the oil is sizzling.
Add the garlic and cook 1 minute. Season to taste and set aside on the counter.
Mash the beans with a fork and spread on the toasted bread. Top with the cooked rapini, drizzle with oil and sprinkle with salt.
Suggested side dish: A slice of watermelon for dessert
