Insert a wooden skewer through the base of a cooked, peeled beet. Slice thinly, stopping when the knife blade hits the skewer. Remove the skewer, insert the “other” way (horizontally) and slice again. Remove the beet from the skewer and flatten it with your hand so that it opens like a flower. Serve with an oil-and-vinegar dressing, walnuts and blue cheese.
