Blueberry Mojitos

“Blueberry and lime are two of my favourite flavours, so I added blueberries to my favourite mixed drink! This recipe can easily be doubled or tripled. To make simple syrup, combine 1/2 cup sugar and 1/2 cup water and cook over medium heat until the sugar is dissolved.   1. Add blueberries and mint leaves to a tall glass; muddle with the back of a wooden spoon. Fill the glass with ice cubes; add rum, lime juice and simple syrup. Top glass with club soda; mix well. Garnish with lime slice, mint and blueberries if desired.
