Cinnamon Spice French Toast with Maple Syrup Apples

Ingredients
6 eggs
1 cup milk
2 tbsp granulated sugar
2 tsp vanilla
1 tsp ground cinnamon
1/4 tsp ground cardamom (optional)
1/4 tsp each ground nutmeg and ginger
Pinch ground cloves
2 tbsp (30 mL) vegetable oil
12 slices (3/4 inch/2 cm thick) egg bread or French loaf
Maple Syrup Apples:
1 tbsp butter
4 cups peeled, cored, sliced apples (such as Golden Delicious, HoneyCrisp or Cortland)
1/2 cup pure maple syrup
1/4 tsp ground cinnamon
Directions
1. In large bowl, whisk together eggs, milk, sugar, vanilla, cinnamon, cardamom, if using, nutmeg, ginger and cloves until well combined.
2. In large non-stick skillet heat oil over medium heat. Dip bread, 2 slices at a time in the egg mixture. Place in skillet and cook about 3 minutes then flip and cook for about 1 minute or until golden brown. Remove from skillet to a large platter; cover with foil and keep warm.
3. Maple Syrup Apples: Meanwhile, in large non-stick skillet, melt butter over medium-high heat. Add apples and stir to coat with butter. Reduce heat to medium-low; cover and cook for 3 minutes. Uncover and cook, stirring occasionally for 2 minutes or until liquid evaporates. Stir in maple syrup and cinnamon; increase heat to medium-high. Cook, stirring occasionally for 2 minutes or until apples are tender.
Serve French toast with apples.
Tip: You can make the Maple Syrup apples up to 3 days ahead . Cover and refrigerate then warm to serve.
