For panini:
1 9-inch baguette (Cut off a 6-inch piece of baguette; slice the remaining 3-inch piece crosswise into six 1/2-inch slices and place in airtight container or sealable sandwich bag and reserve for Bruschetta recipe for Thursday’s lunch)
½ ripened, firm vine tomato (Save remaining half of tomato for Bruschetta recipe for Thursday’s lunch)
4 slices Brie cheese
4 slices prosciutto
1 small handful of mixed greens
For fruit salad:
1 small package fresh strawberries, sliced (Save 5 whole strawberries for Strawberry Avocado Salad recipe for Thursday’s lunch)
1 green apple, cut into bite-size cubes
1 banana, sliced into bite-size rounds
Directions
- For panini: Cut off a 6-inch piece of baguette and slice it lengthwise. Layer with prosciutto, tomatoes, Brie cheese, and mixed greens. Enjoy!
- For fruit salad: Toss strawberries, green apple and banana together in a single serving bowl to end your meal with a fresh fruit salad for dessert
