1 lb (500 g) boneless, skinless chicken breast halves
1/2 tsp (2 mL) celery salt
1/4 tsp (1 mL) garlic powder
2 tsp (10 mL) margarine
2 tbsp (30 mL) red wine vinegar
1/4 tsp (1 mL) ground red pepper
1/4 cup (60 mL) nonfat sour cream
1 tbsp (15 mL) nonfat mayonnaise
1/4 cup (60 mL) crumbled blue cheese
1 tbsp (15 mL) Worcestershire sauce
Directions
Cut chicken into sixteen 4 x 1-inch (10 x 2.5 cm) fingers. Mix celery salt and garlic powder; sprinkle chicken with half of this mixture. Coat large nonstick skillet with nonstick cooking spray; set over medium- high heat. Pan-fry chicken until cooked through, about 2 minutes on each side. Remove skillet from heat and stir in margarine, vinegar, and red pepper. Toss with spatula to coat chicken evenly. Transfer to serving platter and keep warm. Combine sour cream, mayonnaise, blue cheese, remaining celery salt mixture, and Worcestershire sauce in medium bowl to make dipping sauce. Secret to Success: Cut the fat and calories over 55% from the traditional recipe: Buy boneless, skinless chicken breats instead of wings; sauté chicken in a nonstick skillet instead of deep-fat frying; use nonfat sour cream and nonfat mayonnaise instead of the full-fat varieties.
