Chocolate Leaf Cookies
These pretty cookies have a deep chocolate taste-and they’re low-fat too.

Ingredients
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup butter or margarine, softened
1 cup sugar
2 eggs
1 teaspoon vanilla extract
1/2 cup unsweetened cocoa
Granulated sugar, for garnish
Directions
Step 1:
Chill 2 large ungreased cookie sheets. In a large bowl, combine flour, baking powder, and salt; set aside. In another bowl, with mixer at medium speed, beat butter or margarine and sugar until fluffy. Add eggs and vanilla, then cocoa. Add dry ingredients and blend well. Wrap dough in plastic wrap and refrigerate at least 1 hour. Preheat oven to 375°F.
Step 2:
Using a lightly floured rolling pin, roll one quarter of dough directly onto one of the cookie sheets to about 1/16-inch thickness. Cut into leaves using a 3-inch cutter. Remove dough around and between cookies. Sprinkle the cookies with sugar and bake 8 to 10 minutes. Reroll scraps and repeat with remaining dough.
