2 cups (500 mL) water
1 vegetable bouillon cube
1 cup (250 mL) chopped carrots
1 can (28 oz/796 mL) diced tomatoes
1 can (19 oz/540 mL) lentils, rinsed and drained
2 tsp (10 mL) minced garlic
1 tsp (5 mL) dried basil
1/2 tsp (2 mL) ground thyme
1/2 tsp (2 mL) cumin
Directions
In a large saucepan, bring water to a boil. Add vegetable bouillon cube; stir until dissolved. Add carrots; reduce heat to medium and cook, covered, for 10 minutes. Add tomatoes, lentils, garlic, basil, thyme, and cumin; reduce heat to medium-low and cook, stirring often, for 10 minutes or until carrots are tender.
