Ingredients

750 ml    water    3 cups
7 ml    coarse salt    1/2 tbsp.
180 ml    fine corn meal    3/4 cup
60 ml    35% cream    1/4 cup
60 ml    Friulano cheese, grated    1/4 cup
60 ml    Caciocavallo cheese, cut in small pieces    1/4 cup
45 ml    Asiago cheese    3 tbsp.
10 ml    butter    2 tsp.
2 ml    nutmeg    ½ tsp.
To taste    freshly ground pepper

Directions

Bring salt and water to a boil in a medium saucepan. Sprinkle the corn meal over the water, stirring constantly. Cook five minutes over moderate heat, stirring constantly.

Sir in the cream, the three cheeses, the butter and the nutmeg. Mix well and add pepper to taste.

Pour the polenta into a large microwaveable dish. Cover with plastic wrap and microwave at full power for 5 minutes. Allow to cool 5 minutes before removing plastic wrap.
   
LEFTOVERS
Cut cooled polenta into squares, sauté on both sides and garnish as desired.
