1/4 cup (50 mL) mayonnaise
1/4 cup (50 mL) plain low-fat yogurt
3/4 tsp (3 mL) curry powder, or to taste
1/8 tsp (0.5 mL) EACH salt and fresh
1 clove garlic, minced
2 cups (8 oz/500 mL) diced cooked chicken or turkey
5 green onions, including tops, chopped (about 2/3 cup/150 mL)
1 large sweet green or red pepper, cored, seeded, and chopped (1 cup/250 mL)
1 small Golden or Red Delicious apple, cored and diced (1 cup/250 mL)
2 tbsp minced fresh cilantro (coriander) OR 2 tbsp (30 mL) minced parsley mixed with 3/4 tsp (3 mL) dried cilantro
Lettuce leaves
4 whole-wheat pita rounds, halved

Directions

In a medium-size bowl, whisk together the mayonnaise, yogurt, curry powder, salt, ground red pepper, and garlic. Stir in the chicken, green onions, green pepper, apple, and cilantro.

Tuck several lettuce leaves into each pita half, then stuff with the filling. Cover with plastic food wrap and chill until ready to serve. Will keep, refrigerated, for up to 2 days.

Makes 4 sandwiches.
