Ingredients
8 small eggs, pointed end pierced
60 ml 4 tbsp mayonnaise
To taste salt and freshly ground pepper
8 small currants
8 small black olives
As required chive tips
As required curly parsley or tender salad greens
16 grape tomatoes, pierced with a fork
To taste salad dressing of your choice
Directions
Place the eggs in a saucepan, cover with cold water and bring to a boil over medium heat, stirring frequently. Remove from heat, cover and let sit on the counter for 10 minutes. Cool the eggs immediately under cold running water.
Peel the eggs and cut in half lengthwise.
Transfer the yolks to a bowl and mash with a fork, adding enough mayonnaise to make a paste.
Stuff the egg whites with the yolk mixture.
To make the mice, place 2 currants at the pointed end for the eyes.
Slice off the pointed tips of the olives, remove the pits, cut in half and place above the eyes to make the ears.
Place the chive tips under the eyes to make the whiskers.
Place a longer piece of chive at the other end to make the tail.
Finish the dish by tossing the greens and the grape tomatoes with dressing and arranging them on the platter.
