Garlic and Herb Pasta Dressing
Pasta is superb with this simple dressing. The secret is to warm the garlic with bay leaves in the oil, to mellow the garlic flavour slightly. Then the dressing is left to stand so that the flavour of the garlic can infuse the oil.

Ingredients
2 fresh bay leaves
4 garlic cloves, thinly sliced
6 tablespoons extra virgin olive oil
grated rind of 1 lemon
5 tablespoons snipped fresh chives
5 tablespoons chopped fresh parsley
5 tablespoons chopped fresh tarragon, sage, marjoram or dill, or a mixture of fresh herbs
Directions
- Crease the bay leaves in half and place them in a small saucepan with the garlic. Add about 1 tablespoon olive oil and heat gently for 2 minutes or until the oil just begins to sizzle around the garlic. Remove from the heat.
- Stir in the lemon rind, then pour in the remaining oil. Set aside to infuse for at least 30 minutes.
- Remove the bay leaves and add the herbs. Toss the dressing over hot pasta and serve.
