Gougère Bites
Guests will gobble up these petite cheese puffs so quickly, you might want to make a double batch.

Ingredients
1 cup water
1/4 cup butter, cut into small pieces
1 cup all-purpose flour
1/8 teaspoon white pepper
4 eggs
1 cup grated Gruyère or Swiss cheese
1/4 cup snipped fresh chives
2 teaspoons Dijon mustard
Directions
Step 1:
Preheat oven to 400°F. Grease a large baking sheet. In medium saucepan over medium heat, bring water and butter to a boil; reduce heat to low. Add flour all at once and pepper, and stir with a wooden spoon until mixture is smooth and pulls away from sides of pan, forming a ball, about 1 minute. Remove from heat.
Step 2:
Beat in eggs, one at a time, until smooth. Continue beating until dough is shiny and smooth. Stir in cheese, chives, and mustard until well blended.
Step 3:
Drop by heaping teaspoonfuls, about 1 inch apart, onto baking sheet. Bake 20 to 25 minutes, or until puffed and golden brown. (Can be made ahead to this point. Bake as directed above and transfer bites to wire rack to cool completely. Return bites to cookie sheet and place flat in the freezer. When bites are frozen, put into plastic freezer bag. Gently squeeze out excess air and seal bag. To reheat, place bites on cookie sheet and bake in preheated 350°F oven until hot, about 10 minutes.) Serve warm.
