Green Beans With Wild Mushrooms
Mixing wild mushrooms with green beans is a great way to make the most of a pricey but delectable ingredient. Prepare this dish up to one day ahead with shiitake, cremini, or oyster mushrooms, or a combination of all three.

1-1/2 pounds green beans
2 tablespoons butter
1/2 pound fresh wild mushrooms (such as shiitake, cremini, oyster, or a combination)
Salt
Ground black pepper
Directions
Step 1:
Trim stem ends from beans. Bring a large saucepan of lightly salted water to a boil. Add beans and cook, uncovered, 5 to 7 minutes, or until tender-crisp. Drain and rinse under cold water to stop cooking.
Step 2:
Trim and clean mushrooms. In a 12-inch skillet over medium-high heat, melt butter and cook mushrooms, stirring frequently, until mushrooms give up their liquid and then reabsorb it, about 10 minutes. (Can be made up to 1 day ahead to this point if covered and refrigerated and mushrooms and beans are stored in separate dishes.)
Step 3:
Just before serving, in a 12-inch skillet over medium-high heat, heat mushrooms and beans just until hot. Season with salt and pepper to taste.
