Ingredients
450 g (1 lb) mini lasagne*
750 ml (3 cups) tomato sauce
1 can, 398 ml (14 oz) canned, chopped spinach
750 ml (3 cups / 340 g) mozzarella cheese, grated
Salt and freshly ground pepper, to taste
Directions
- In a large pot, cook the pasta al dente, following package directions. Drain without rinsing and set aside.
- Preheat the broiler.
- In a large skillet, combine the sauce, spinach, half the cheese and the pasta.
- Heat while stirring carefully to coat the pasta well. Season to taste with salt and pepper and transfer to a baking dish.
- Sprinkle the remaining cheese on top of the pasta and broil for 5 minutes or until the cheese is melted and lightly browned.
- Serve immediately.
*You may also use mafaldine.
