Ingredients

450 g (1 lb) mini lasagne*
750 ml (3 cups) tomato sauce
1 can, 398 ml (14 oz) canned, chopped spinach
750 ml (3 cups / 340 g) mozzarella cheese, grated
Salt and freshly ground pepper, to taste

Directions

  1. In a large pot, cook the pasta al dente, following package directions. Drain without rinsing and set aside.
  2. Preheat the broiler.
  3. In a large skillet, combine the sauce, spinach, half the cheese and the pasta.
  4. Heat while stirring carefully to coat the pasta well. Season to taste with salt and pepper and transfer to a baking dish.
  5. Sprinkle the remaining cheese on top of the pasta and broil for 5 minutes or until the cheese is melted and lightly browned.
  6. Serve immediately.

*You may also use mafaldine.
