Ingredients
125 ml (1/2 cup) mayonnaise
30 ml (2 tbsp) dried tomatoes in oil, blotted dry, in thin strips
Salt and freshly ground pepper, to taste
720 g / 1 1/2 lb lean ground beef
4 grey shallots, chopped finely
2 cloves, garlic, minced or pressed
Salt and freshly ground pepper, to taste
90 g (3 oz) old Cheddar
2 ciabatta breads, cut in half
Arugula leaves, trimmed, to taste
2 Italian plum tomatoes, sliced thinly
Directions
- In a bowl, combine the mayonnaise, dried tomatoes, salt and pepper. Set aside.
- Preheat the barbecue.
- In another bowl, combine the meat, shallots, garlic, salt and pepper. Shape into four burgers.
- Lightly oil the barbecue grill and cook the burgers for about 5 minutes on each side. For additional safety, check the internal temperature of the meat with an instant-read thermometer. It is done when the temperature is 70°C / 160°F.
- Using a cheese slicer, slice the Cheddar very thinly. Place the meat on a heated plate, top with the cheese slices and cover to melt.
- Cut the bread halves in half horizontally and grill lightly on the inside.
- To assemble the burgers, spread both sides of the bread with the mayonnaise and garnish with arugula and tomato slices.
