Lamb Brochettes with Aioli

Ingredients

675 g (1 1/4 lb) leg of lamb, visible fat removed, in 3-cm (1 1/2inch) cubes
75 ml (1/3 cup) red wine
75 ml (1/3 cup) olive oil
3 cloves garlic, minced
2 orange bell peppers, in 2.5 cm (1 inch) squares
5 green onions, in 3 cm (1 1/2 inch) lengths

Aïoli:
180 ml (3/4 cup) mayonnaise
15 ml (1 tbsp) fresh rosemary, minced
3 cloves garlic, minced
10 ml (2 tsp) balsamic vinegar
Water, as required
Salt and freshly ground pepper, to taste

 

Directions

  1. Marinate the lamb in the wine, oil and garlic for 2 hours.
  2. Assemble the brochettes, alternating pieces of lamb, pepper and green onion. Set aside.
  3. Preheat the grill.
  4. In a food processor, place all the ingredients for the aïoli, except the water. Pulse to combine, adding water as required to make a smooth, slightly runny sauce.
  5. Grill the brochettes over medium heat, turning frequently, for about 8 minutes (the lamb will still be pink inside).
  6. Serve with the aïoli.
