Lamb Brochettes with Aioli

Ingredients
675 g (1 1/4 lb) leg of lamb, visible fat removed, in 3-cm (1 1/2inch) cubes
75 ml (1/3 cup) red wine
75 ml (1/3 cup) olive oil
3 cloves garlic, minced
2 orange bell peppers, in 2.5 cm (1 inch) squares
5 green onions, in 3 cm (1 1/2 inch) lengths
Aïoli:
180 ml (3/4 cup) mayonnaise
15 ml (1 tbsp) fresh rosemary, minced
3 cloves garlic, minced
10 ml (2 tsp) balsamic vinegar
Water, as required
Salt and freshly ground pepper, to taste
Directions
- Marinate the lamb in the wine, oil and garlic for 2 hours.
- Assemble the brochettes, alternating pieces of lamb, pepper and green onion. Set aside.
- Preheat the grill.
- In a food processor, place all the ingredients for the aïoli, except the water. Pulse to combine, adding water as required to make a smooth, slightly runny sauce.
- Grill the brochettes over medium heat, turning frequently, for about 8 minutes (the lamb will still be pink inside).
- Serve with the aïoli.
