Leftover Chicken Ramen

Eventually, the rest of the meat makes its way into pastas, salads, soups, etc. Then we are left with the bones and the prized chicken jelly at the bottom of the tray. Pickles:
  1. Bring white sugar and rice wine vinegar to a boil.
  2. Pour over vegetables and let sit for 20 minutes.
Ramen Broth:
  1. Place all ingredients in a pot and simmer for 45 minutes.
  2. Strain and reserve.
Soy-stained Eggs:
  1. Bring a pot of water to a boil, add eggs and boil for 6 minutes.
  2. Cool eggs in an ice bath before peeling.
  3. Pour the soy, rice wine vinegar, and mirin over the eggs.
  4. Let sit in the fridge for 24 hours.
Finishing (per bowl):
  1. Cook the ramen noodles in a pot of boiling water for 2 minutes, or as per package instructions.
  2. Strain the ramen noodles and transfer them to a large soup bowl.
  3. Bring the ramen broth to a boil and pour over the noodles.
  4. Stir in the shiro miso and garnish with all other ingredients.
  5. Serve with chopsticks and a dumpling spoon
