Ingredients

50 ml (1/4 cup) olive oil
1 medium onion, chopped
1 red pepper, sliced thinly
2 cloves garlic, minced
1 can, 398 ml (14 oz) diced tomatoes
Salt and freshly ground pepper, to taste
340 g (3/4 lb) medium shrimp, peeled and deveined
250 g (9 oz) mozzarina cheese, in 1-cm / 1/2-inch cubes
Coriander sprigs, to taste

Directions

  1. In a skillet, heat the oil and fry the onion, red pepper and garlic over high heat for 1 to 2 minutes.
  2. Add the tomatoes, salt and pepper and simmer 2 minutes.
  3. Add the shrimp and cook 2 minutes until they lose their translucence. Remove pan from heat and sprinkle the cheese over the shrimp. Cover 1 minute to allow the cheese to melt slightly.
  4. Serve hot.
