Multigrain Hot Cereal with Maple Nuts
This is a great idea for a quick and easy breakfast. Make it ahead of time and grab a half-cup portion when you need it.

Ingredients
¼ cup walnuts (generous)
3 tablespoons pure maple syrup
½ cup roasted brown rice couscous
½ cup quinoa, preferably tricolor, rinsed
1 tablespoon chia seeds
½ teaspoon salt
2¼ cups water
1 cup light coconut milk
Directions
In a dry skillet or toaster oven, toast the walnuts for 3 to 5 minutes. While still hot, chop them, place them in a small bowl, and stir in the maple syrup.
In a small saucepan, combine the couscous, quinoa, chia seeds, salt, and water. Bring to a boil, then reduce to a simmer, cover, and cook for 8 minutes.
Uncover, stir in the coconut milk, and simmer, stirring, for 7 to 9 minutes, or until the grains are tender and the mixture has the consistency of hot cereal.
Top each serving of cereal with 2 teaspoons of the maple nuts.
