Ingredients
450 g / 1 lb orecchiette
750 ml / 3 cups / 700 g diced potato
30 ml / 2 tbsp olive oil
2 cloves garlic, chopped
1 can / 796 ml / 28 oz Italian tomatoes
5 ml / 1 tsp hot pepper flakes
To taste salt and freshly ground pepper
Directions
In a large pot, cook the pasta al dente, following package directions. Drain without rinsing and set aside.
In a saucepan, cook the potatoes al dente in salted water. Drain, rinse under cold water and set aside.
In a large skillet, heat the oil, add the garlic and pepper flakes and cook until the garlic begins to brown.
Add the tomatoes and simmer, uncovered, for 15 minutes. Season with salt and pepper to taste.
Add the pasta and potatoes to the sauce and stir well to combine.
Serve immediately.
