Oriental Shrimp
These delectable shrimp take less than 15 minutes to make. Serve them on simple wooden skewers.

Ingredients
2 bottles (12 ounces each) beer, preferably lager
2 pounds medium shrimp, peeled and deveined
2 tablespoons olive oil
2 jalapeño peppers, seeded and minced
2 tablespoons soy sauce
2 tablespoons freshly squeezed lime juice
4 teaspoons grated fresh peeled ginger
1 teaspoon granulated sugar
1/4 cup minced fresh cilantro (coriander)
Directions
Step 1:
In medium saucepan over high heat, bring beer to a boil. Add shrimp; bring to a second boil. Remove from heat. Cover and let stand 2 minutes, or until shrimp turn opaque and curl. Drain and set aside. (Shrimp can be cooked 1 day ahead if drained, covered, and refrigerated.)
Step 2:
In small saucepan over medium-high heat, heat olive oil and cook jalapeños, soy sauce, lime juice, and ginger 2 minutes. Remove from heat and stir in sugar; cool. (Sauce can be made up to 1 day ahead if covered and refrigerated.) Add sauce and cilantro to shrimp and toss to coat shrimp. To serve, thread shrimp on 6-inch wooden skewers (2 per skewer) or serve with toothpicks. Serve cold.
