Ingredients
1 lb pappardelle
3 tbsp olive oil
1 cup onion, sliced thinly
1/ 5 cup zucchini, sliced
Salt to taste
1 tsp dried oregano
2 tbsp mchopped parsley
1/2 cup 35% cream, heated
1 cup grated Grana Padano cheese
Directions
In a large pot, cook the pasta al dente, following package directions. Drain without rinsing and set aside.
In a saucepan, wilt the onion in the oil.
Add the zucchini and cook 8 minutes.
Add the salt, oregano and parsley and cook 1 minute.
In a food processor, purée the zucchini with the hot cream.
Add the zucchini sauce to the pasta, mix well, then toss with the cheese.
Serve immediately.
