Ingredients
250 ml / 1 cup unsalted butter at room temperature
250 ml / 1 cup sugar
5 ml / 1 1/2 tsp almond extract
500ml / 2 cups all-purpose flour
10 ml / 2 tsp baking powder
2 eggs
8 ripe pears, peeled and cored, each cut in 6 wedges
60 g / 2 oz semisweet chocolate, grated, melted
To taste chocolate shavings
Directions
Preheat the oven to180°C / 350°F.
Butter and flour two 23-cm / 9” cake pans.
In a bowl, beat together the butter, half the sugar and the almond extract until pale.
Gradually add the flour, baking powder and eggs, mixing all the time.
Divide the batter between the two pans. Arrange the pear wedges, round side up, on top of the batter in both pans and sprinkle with the remaining sugar.
Bake for 40 minutes.
Remove from the oven and set on racks to cool.
Carefully remove one layer from the pan, turning it upside down on a serving platter.
Spread the melted chocolate on the exposed bottom of the cake.
Place the other layer, pear side up, on top of the first one. Sprinkle with chocolate shavings.
Serve at room temperature.
