Crust
375 ml / 1 1/2 cups flour
30 ml / 2 tbsp sugar
1 pinch salt
125 ml / 1/2 cup cold unsalted butter, cut in pieces
1 egg yolk, beaten
30 ml / 2 tbsp cold water
To taste sugar
Fruit
1 kg / 2 lb plums, pitted and quartered
150 ml / 2/3 cup blackberries
150 ml / 2/3 cup raspberries
7 ml / 1 1/2 tsp ground allspice
2 envelopes vanilla sugar
30 ml / 2 tbsp cold butter
Directions
In a food processor, combine the flour, sugar and salt. Add the butter and pulse until the mixture is in pieces the size of small peas.
Add the egg yolk and water and pulse just until the dough forms a ball around the blade. Divide the dough into six pieces, flatten into disks, wrap each in plastic wrap and refrigerate 30 minutes.
Preheat oven to 190ºC / 375ºF. Butter a 1.5-L / 6-cup baking dish.
In a bowl, combine the plums, berries, allspice and sugar. Transfer to the baking dish and dot with butter. Arrange the circles of dough in an overlapping pattern over the fruit and bake for 35 to 40 minutes or until the crust is golden.
Serve warm.
