Ingredients
8 flour tortillas (6” / 15 cm diameter)
1/2 cup (125 mL) reduced-sodium tomato sauce
1 can (3 oz / 85 g) jalapeño or green chili peppers, drained and coarsely chopped
2 cloves garlic, finely chopped
2 tbsp (30 mL) chopped parsley or cilantro
1/8 tsp (0.5 mL) pepper
1/2 cup (125 mL) shredded low-fat Cheddar cheese
Directions
Preheat oven to 300ºF (150ºC). Wrap tortillas together in foil and warm in oven for 10 minutes. Increase oven temperature to 375ºF (190ºC). Unwrap tortillas and arrange in single layer on two nonstick baking sheets. Spread thin layer of the tomato sauce over each tortilla.
Sprinkle jalapeños, garlic, parsley, and pepper over sauce. Sprinkle cheese on top. Bake 10 minutes or until cheese is melted and pizzas heated through. Health Hint: Hot peppers, garlic, and other seasonings that add a strong flavour “kick” to food also contain powerful phytochemicals that may help fight heart disease and cancer.
Cook’s Clue: To boost fibre, look for whole-wheat tortillas. To lower fat even further, try fat-free tortillas. To double or triple the recipe, simply double or triple the amount of ingredients.
