10 garlic cloves, chopped
 Salt, to taste
30-45 mL (2-3 tbsp) chopped fresh rosemary
125 mL (1/2 cup) olive oil
1 loaf country bread, such as ciabatta, split in half, then sliced into individual portions
Directions
Crisped on the barbecue, this hot toasted bread makes an excellent appetizer: serve with a plate of spicy salami, fresh mozzarella, ripe garden tomatoes, and tangy green olives. It also makes a terrific base for a hot melted sandwich.
Purée the garlic with salt, preferably using a mortar and pestle, then add the rosemary and lightly crush into the garlic mixture.
Mix in the olive oil, then brush most of this mixture very generously onto the cut surfaces of the bread pieces. Prepare a charcoal fire or preheat a gas grill. Toast the bread on both sides over hot coals, until crisp and golden brown. Remove from the heat and brush once again with the garlic-rosemary oil.
Serve immediately.
