Ingredients
1 shallot, minced
2.5 ml / 1/2 tsp white pepper, cracked
125 ml / 1/2 cup white wine
125 ml / 1/2 cup cold butter, in small pieces
45 ml / 3 tbsp 35% cream
To taste freshly squeezed lemon juice
10 ml / 2 tsp capers, rinsed
To taste salt and freshly ground pepper
As required chopped parsley
4 pieces, 150 g / 5 oz each salmon fillet
Directions
In a small saucepan, combine the shallots, pepper and wine.
Bring to a boil and reduce until the liquid has almost completely evaporated.
Reduce heat to medium and add the butter, whisking constantly.
Add the cream right away and bring to a boil. Reduce heat and simmer for 5 minutes.
Strain and add lemon juice to taste. Add the capers and season with salt and pepper.
Keep warm in a double boiler over barely simmering water.
Bake or poach the salmon and serve with the sauce, garnished with parsley.
