Ingredients

1 pita bread
2 slices brie cheese, cubed
2 slices prosciutto, cut into bite size pieces
1/3 can (52 mL) tomato paste (remainder from Tuesday’s lunch)
1 tablespoon olive oil
½ teaspoon salt
You will need to use a toaster oven for this recipe.

Directions

  1. Spread tomato paste over pita bread and sprinkle with salt. Top with prosciutto slices and brie cheese. Drizzle with olive oil.
  2. Place in toaster oven and bake at 350 degrees Celsius for 7 to 10 minutes. Serve with a side of mixed greens salad tossed with olive oil and balsamic vinegar.
