Slow-Cooker Al Pastor Bowls

Ingredients
- 2 cans whole green chiles 7 ounces each
- 1 can pineapple chunks drained, 20 ounces
- 1 medium onion chopped
- 1/2 cup orange juice
- 1/4 cup white vinegar
- 3 garlic cloves peeled
- 2 tbsp chili powder
- 2 tsp salt
- 1-1/2 tsp smoked paprika
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- 4 lbs boneless pork loin roast
- hot cooked rice
- Optional toppings:
- black beans
- chopped avocado
- corn
- sliced radishes
- lime
- Mexican crema

Instructions
- Puree first 12 ingredients in a blender. In a 5- or 6-qt. slow cooker, combine pork and pepper mixture. Cook, covered, on low until pork is very tender, 6-8 hours. Stir to break up pork.
- Serve pork in bowls over rice. If desired, add toppings.
