Ingredients
1 l/4 cups (240 g) arugula
250 ml (1 cup) strawberries, sliced
125 ml (1/2 cup) walnuts, chopped
30 ml (2 tbsp) green onion, thinly sliced
45 ml (3 tbsp) freshly squeezed lemon juice
30 ml (2 tbsp) honey
50 ml (1/4 cup) olive oil
Salt and freshly ground pepper, to taste
Directions
- In a large bowl toss the arugula, strawberries, walnuts and green onions.
- In another bowl, combine the lemon juice, honey and oil.
- Pour the vinaigrette over the salad and season with salt and pepper.
- Toss just before serving.
