Ingredients

2        large tomatoes, peeled, seeded and diced
250 ml / 1 cup    tomato juice
15 ml / 1 tbsp    chopped fresh tarragon leaves
3 ml / 1/2 tsp    salt
5 ml / 1 tsp    sugar
50 ml / 1/4 cup    water
To taste        Espelette purée*
4 sprigs    tarragon

Directions

Place the first 7 ingredients in a blender and purée.

Pour the mixture into a shallow dish and place in the freezer until it begins to freeze around the edges.

Using a fork, and working from the edges to the centre, scrape the ice to break it into crystals.

Repeat the freezing and scraping process several times until the entire mixture is nothing but fine crystals.

Serve in frosted glasses with a sprig of fresh tarragon.

*The Espelette is a fiery little red pepper grown in the Basque region of France. The purée comes in jars and is available in fine groceries and gourmet shops.
