8 oz (250 g) ziti
2 tsp (10 mL) olive oil
2 strips turkey bacon, coarsely chopped
1 medium red onion, finely chopped
2 cloves garlic, minced
1 green bell pepper, cut into 1/2-inch (1 cm) squares
1 small bulb fennel, thinly sliced crosswise (2 cups / 500 mL)
1-1/2 cups (375 mL) canned crushed tomatoes
1/2 cup (125 mL) orange juice
1/2 tsp (2 mL) salt
1/4 tsp (1 mL) cracked black pepper
8 oz (250 g) lump crabmeat, picked over to remove any cartilage
Directions
Cook ziti in large pot of boiling water according to package directions. Drain, reserving 1/2 cup (125 mL) pasta cooking liquid. Meanwhile, heat oil in large nonstick skillet over medium heat. Add bacon and cook until lightly crisped, about 4 minutes. Add onion and garlic to skillet and cook, stirring frequently, until onion is tender, about 5 minutes. Add bell pepper and fennel, and cook until crisp-tender, about 7 minutes. Stir in reserved pasta cooking liquid, tomatoes, orange juice, salt, and black pepper, and bring to a boil. Reduce to a simmer, cover, and cook until sauce is flavourful and fennel is tender, about 5 minutes. Stir in crabmeat and cook until heated through, about 5 minutes. Transfer to large bowl, add pasta, and toss to combine. Health Hint: Fennel is more than a low-calorie, fat-free vegetable with a mild, sweet flavour. It also provides potassium, vitamin C, and the important B vitamin, folate. Folate may be instrumental in lowering blood levels of homocysteine, an amino acid linked to heart disease and cancer.
